Inspired by old Champagne practices, but elevated with modern techniques - this is an elegant, rich, and bold take on our classic Blanc de Blanc. The base wine was fermented in 100% New French Oak, causing a dangerously enjoyable marriage between fruit & wood. Although the barrels were light in toasting, the aromas are heavy with honey, bay-leaf, grapefruit peel, and nutmeg. The power of this sparkling is balanced with bright acidity and zesty carbonation.
